Review of DOD's Pork Purchasing

A limited review of pork purchasing by the Department of Defense (DOD) examined the effects of recent purchasing policy changes. The competitive aspects of the procurement of pork chops, pork loin roasts, and bacon at a DOD facility were examined to determine the effects of a recent changeover from military specifications to commercial-type specifications.

The review found some additional competition for the pork chops and roasts, and significantly lower prices for the roasts resulting from the recent changeover in procurement policy. However, a more restrictive specification for bacon resulted in higher prices.
